A typical Calabrian cured meat, made from the finest lean pork cuts, minced into medium pieces and then combined with other portions of carefully selected lard, pepper sauce, salt, and hot chili pepper. Stuffed into a large intestine, it is hand-tied with natural string and aged for a minimum of forty-five days.
