From a careful selection of the finest pork cuts—the shoulder and rib—coarsely minced with lard, salt, and chili pepper sauce, the "Salumi del Castello" sausage is created. This special product, crafted according to traditional methods, is stuffed into natural pork intestines, then pierced and hand-braided to create the classic horseshoe shape. This traditional sausage, available in both mild and spicy versions, arrives on the table after a minimum of thirty days of curing and with its distinctive aroma derived from the smoking process.
