The Struncatura It's a special type of pasta with an ancient tradition, typical of Calabria. It's made with bronze-drawn durum wheat semolina.
The traditional recipe calls for it to be served with a dressing made from extra virgin olive oil, garlic, chili pepper, anchovies, olives, and toasted breadcrumbs. Other variations include stockfish or 'nduja and cherry tomatoes.
