Extremely long, porous to the touch, and dark in color, stroncatura, or struncatura, is a typical pasta from the Gioia Tauro plain in Calabria. It was once made with the flour and bran leftovers from wheat milling, but today it's made with high-quality flours. The traditional recipe calls for it to be served with a sauce made from extra virgin olive oil, garlic, chili pepper, anchovies, olives, and toasted breadcrumbs. Other variations include stockfish, 'nduja, and cherry tomatoes.
