Highly selected durum wheat semolina, water, and chili pepper: few ingredients but a great flavor, that of Soldano's "Fileja al peperoncino" (Chili Pepper Fileja), made according to a traditional recipe from the province of Vibo Valentia, Calabria. The pasta, characterized by its twisted shape and rough texture, pairs well with any sauce, but tradition recommends enjoying it with a tomato and fresh basil sauce and a sprinkling of grated Monte Poro pecorino cheese.
