A DOP hard cheese, made with raw cow's milk, partially skimmed by surfacing, without the addition of additives or preservatives. The maturation process, Aged 36 months, it offers a bold, complex flavor with spicy notes that pair well with robust, full-bodied wines. Enjoy it simply with bread, jams, and fresh fruit, or grated or flaked into other dishes. Ideal for those with lactose intolerance, it should be stored in the refrigerator between 40 and 46 degrees Fahrenheit (4 and 8 degrees Celsius), away from other foods due to its tendency to absorb odors.
