A spreadable sausage made from pork in the Spilinga area, home of authentic 'nduja. Smoking and careful curing give the product a unique flavor that complements the spicy chili pepper, whose presence among the ingredients eliminates the need for preservatives and colorings. A specialty worth trying, perhaps accompanied by crostini, taralli, olives, and typical Calabrian cheeses.
