The Buriotto bean variety, grown on a white, rounded seed, is known in the Poro and Caria plateaus (Calabria), where it is also known as "butter bean" due to the consistency the legume takes on when cooked. Sweet in flavor, the Buriotto can be consumed year-round thanks to the drying technique that preserves its integrity without altering its unique organoleptic properties. Buriotto beans, cooked in a pot, are also excellent simply seasoned with olive oil and chili pepper.
