Traditional, crunchy, caramelized biscuits, featuring a darker, softer base topped with a much lighter, firmer shell. Their distinctive bone-like shape is the result of a special process that involves preparing the dough and letting it dry for several days before baking. Available in both the classic cinnamon and clove variant and a version revisited by the pastry chefs at Latteria del Sole with the addition of lemon, mandarin, or rum essences, they're excellent paired with a glass of anise.
