A cured meat made from the upper part of the pork loin, which is then deboned and dry-salted before being wrapped in the pig's diaphragm. Tied with natural twine and flavored with Monte Poro chili pepper, the Salumi del Sole capocollo, as per specifications, is aged for a minimum of 90 days and is perfect thinly sliced, as a base for parcels filled with cream cheese or vegetables, or as a flavoring for pizzas and savory pies.
